1 kg osso bucco 1 onion diced 1 carrot diced 2 sticks celery diced 1 tbsp cornflour 1/2 cup white wine 1/2 cup tomato paste 2 cups beef stock 1 clove garlic, parsley grated lemon rind x2 Preheat oven to 180 deg C. Brown osso bucco in large pan with 2 tlbsp oil. Remove from pan and place in large casserole dish. Add vegetables to pan and cook 1-2 min. Sprinkle in cornflour, add wine, tomato paste and stock. Bring to boil, pour over meat. Cover and cook for 2-2.5 hours, topping up water to just cover if necessary. Sprinkle with chopped garlic, lemon rind, parsley, pepper and salt. Serves 4. |
